Really Short and Sweet: Banana Bread

Banana bread is one of those favourite and easy recipes that I keep going back to time and time again. I think there's something about the scent of bananas that boosts the butteriness of this quick bread and makes it so irresistible. It's completely delicious on its own, but this "deluxe" one is packed with chocolate chunks and walnuts too, just for extra oomph.

Banana Bread

3/4 cup sugar
1/2 cup butter, softened
2 eggs
1 cup mashed ripe bananas
1/3 cup milk
1 teaspoon vanilla
2 cups flour
1/2 cup chopped walnuts
1/3 cup chocolate chunks
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 F. Grease the bottom a 9x5 loaf pan. Cream butter and sugar until light and fluffy. Beat in eggs, blend in bananas, milk and vanilla. In a separate bowl, combine flour, nuts, chocolate, baking soda, and salt. Mix well. Add to creamed mixture and blend just until dry ingredients are moistened. 
Bake for 50 to 60 minutes until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Unmold and cool completely before slicing.

Aunt Holly's Banana Bread

I think I may have found the perfect banana bread recipe. Why?

-Easy directions: just measure and mix. Prepared in one bowl with no butter creaming.
-Short ingredient list: Sour cream and/or milk commonly make appearances in banana bread recipes and I don't always have those on hand. This can be made with (my) pantry staples.
-Completely delicious: No compromises on texture or flavour, despite the recipe's simplicity
3 to 4 ripe bananas
1/4 cup melted butter
1 cup sugar
1 1/2 cups flour
1/4 teaspoon salt
1 egg, beaten
1 teaspoon baking soda
Chocolate chips (as many as you want!)

Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.
